Dear Sweet Souls

Today, it is my birthday. I cannot really believe it. One year has already passed. So fast!!

Yesterday evening, I looked back on my year that had past and expressed gratitude for my experiences.

How do you express gratitude for your life? I am feeling so immensely happy that I am able to live the life I am living. Every day is truly a blessing. Recently, I have started a new morning routine. I wake up early in the morning. Immediately, my sweet body likes to go outside and say hello to a new day. Although I feel it is very early, at 5.30 a.m, it feels so good afterward. I usually walk for about 50 min. We are living close to a huge park which I usually go through.

After my morning walk, I do a little self-massage on my face. It is a Japanese face massage which I felt in love with after my return from a face massage in Tokyo. The face massage stimulates the blood cells in your face as well as in your body as the face is tightly connected to your body. Do you also have a similar morning routine?

I Love Summer

Dear Beautiful Soul

How are you? I hope you are enjoying the summer/winter – and maybe soon you are going on vacation!!

It has been a while since I wrote to you. I have been a little busy over the last months. In the beginning of  May I started preparing for my trip back to Denmark (my home county). It was a nice stay both by my parents and sister. My sister gave birth to a little son in March this year. It was my first nephew/niece. I was happy to meet him and spend time with this little being.

After being back from my trip to Denmark last week, I relaxed. Yesterday I had my first official Japanese-Language Profiency Test (JLPT Level N5). I have studied Japanese for approximately 2 years. My first language school was located in Shibuya, Tokyo. Only after 3 weeks I quit the school. The course was very intensive, everyday 4 hours per day. And homework and test every week. It was mainly focusing on writing and grammar skills.

I took a break for about one year. After making my research on Internet I found another language school and this school has now been my school for the last years. I can highly recommend it. What I like about the school is as following:

  • The teachers are very professional and they speak fluent English
  • The school have crated their own Japanese Text books that is easy to follow. It focuses on Japanese communication skills and basic skills that makes your daily life in Japan easier.
  • The school is small and the size of the class are therefore also small. I have only been studying with one another student.
  • You receive an extraordinary good service and it is for no reason that the school is named Sun Academy .

The summer has now come to Japan. In Tokyo, the temperature will today reach 34 degrees.

I love summer and I am very grateful that can experience a warm summer in Japan!!

Italian Almond Cake

Dear Beautiful!!

Today, I made this lovely Almond Cake. It is soft and may be a lovely dish for the breakfast table.

Italian Almond Cake

200 g sugar

180 g butter + extra for the pan, softened at room temperature

2 eggs

1 small tspk baking powder

Zest of a half untreated lemon

200 g Ground almond flour

200 g Plain flour

A pinch of salt

0,8 dl Almond milk

20 g Confectioner’s sugar, for dusting + some almonds, for decoration (optional)

Preheat the oven to 350°F/180°C.

In a large bowl, whisk the sugar and butter until smooth. Incorporate the eggs one by one. Fold in the baking powder, ground almond flour, plain flour, zest and a pinch of salt, and then add the milk.

Generously butter a cake pan, approx. 24 cm, and dust with a little flour. Shake off any excess flour, then pour the cake batter into the cake pan.

Bake for approximately 40 minutes, or until the cake is golden.

Sprinkle with confectioner’s sugar and some almonds.

Sakura Mochi – Japanese Cherry Blossom Dessert!

I hope you are doing great!! What is your favorite sweet/dessert? Do you have any? I would love to hear from you.

When I came to Japan, my sweet world opened up to a whole new level. So many sweets/cakes/desserts that I never had seen before. It was so amazing and enormous at the same time. One of my favorite desserts is Cherry Blossom Sweet Rice Cake. In Japanese it is called Sakura Mochi, 桜餅 (さくらもち).

Sakura mochi is made of sweet glutinous rice and filled with a sweet red bean paste. It is wrapped in a pickled sakura leaf which is edible. Sakura mochi is traditionally enjoyed during Hinamatsuri (Japanese Girl’s Day) to celebrate the beginning of spring, and to pray for the health and happiness of all little girls.

Sakura mochi is pink, just like sakura (cherry blossom flowers). It looks so lovely and sweet.

Rose Vanilla Truffles

Oh, these truffles looks so tempting.

Next week is my Christmas Shopping week. My Japanese class has stopped for a little winter break. I am so looking forward to do all the Christmas Shopping, writing Christmas Cards and do some Christmas Cooking.  My family lives in Denmark so I need to prepare for presents to be sent. I am currently making a list of what to gift them.

Yesterday,  I went to an amazing shop in the little city where I live. The name of the shop is Today’s Special.

Delicious Olive Oil, Almond, Pear Cake

Dear Lovelies,

This week I made another lovely cake. I LOVE baking. It makes my heart sings. And it feels so naturally; to look after a new recipe, to buy the ingredients, and to make it!

This cake is inspired by Cécile Molinié & Aran Goyoaga. It is a very soft and delicate cake because of the olive oil, the coconut milk and the zest from the lemon. You can make it with any fruits you like.

Gingerbread Bundt Cake

Oh, the other day, I made this lovely and soft Gingerbread Bundt Cake created by Linda Lomelino. The smell of the cake reminded me of Christmas. Inside it is filled with lovely spices, like cinnamon, ginger, cardamom.

I only made half portion, as we only are two people in the household. And it was big enough! I added a little less sugar, and used brown sugar. Also I didn’t have cane sugar, so I made it myself by heating up a mixture of brown sugar and water (in the ratio of 1 1/4 cup of sugar to 1/3 cup of water).
